Can you believe there is an actual “National Lasagna Day”? July 29—a whole day dedicated to eating this delicious dish!
There is nothing better than a hearty home-cooked meal, and lasagna is the ultimate comfort food. To participate in National Lasagna Day, I’m taking one of the most traditional Italian recipes and upgrading it with a healthy twist. I’m excited to introduce you to my family’s favorite lasagna recipes using my Sweet Potato Tomato Sauce.
It’s all in the sauce
Not only are you getting a lot of flavor, you’re also getting a lot of nutrition—all thanks to the sweet potato!! This sauce is a nutritional champion loaded with beta-Carotene, fiber, iron, and Vitamins A, B6, C, & D, that shine through in every bite. With 75% vegetables per serving, my Sweet Potato Tomato Sauce is the perfect way to turn a comfort food classic into a healthy meal. Give it a try!
Roasted Vegetable Lasagna
You may be thinking, “Lasagna Day in the middle of summer?!” Worry not—my Roasted Vegetable Lasagna is not only a lighter version of its traditional counterpart, but it’s LOADED with fresh summer vegetables like eggplant and zucchini. I promise you won’t miss the meat! Hit the farmer’s market for this one, you won’t regret using local in-season veggies.
Little Lasagna Cups
If you simply can’t leave the carbs behind (I don’t blame you), I have a recipe for you, too. This dish can often seem like a daunting kitchen feat, but it doesn’t have to be! These Little Lasagnas use ground turkey and wonton wrappers for a light, easy, and fun meal the whole family will enjoy. These bundles of goodness also make the perfect appetizer for your next dinner party. Plus, they’re pretty cute, right?
Watch how they are made, then try for yourself!
The dish that keeps on giving
Beyond the mouth-watering flavors, lasagna is a wonderful meal for a number of reasons. You can work around your busy schedule by prepping your dish ahead of time. Beyond that, my Roasted Vegetable Lasagna will feed the family for days! Hooray! Hooray! Less cooking time and more family time. For now, it’s time to celebrate! I recommend pairing these dishes with 2014 Fritz Estate Zinfandel.
Happy Lasagna Day, friends!
